Floating islands recipe (îles flottantes)

This classic French floating islands recipe delivers all the elegance of a Parisian dessert - with a surprisingly simple, stress-free method anyone can master at home.

Îles flottantes with caramel sauce and sliced almonds

Ever wish you could escape to a tropical island for just a minute… without leaving your kitchen or tapping into your savings? Meet Floating Islands (îles flottantes in French). A classic dessert that feels fancy but is totally doable, even on a weeknight when you've just put the kids to bed (again 😅).

Since a tropical getaway isn't happening anytime soon, feet up in the sun and all, I cheer myself up with small, ultra-indulgent homemade desserts. And as far as islands go, I'll take them floating, in a sea of silky crème anglaise, topped with toasted sliced almonds.

These soft, cloud-like meringues floating gently on a creamy vanilla custard (crème anglaise) taste like a hug from France itself. Add a drizzle of caramel and toasted almonds, and you've got a dessert that looks chef-level without the fuss.

What are floating islands (îles flottantes)?

Floating Islands, known in France as îles flottantes, are a classic French dessert made of two simple elements:

  • a smooth vanilla custard (crème anglaise)
  • light, airy meringue "islands" made from whipped egg whites

The meringue is gently cooked (poached, baked, or microwaved) and placed on top of the custard, where it quite literally floats. The texture is heavenly: the custard is smooth and pourable, and the soft meringue literally melts in your mouth.

And yes… this recipe includes a microwave method for the meringue, because real life (and tired parents) deserve shortcuts that actually work. Honestly, it's my preferred method anyway! And I almost never cook anything in the microwave - except for reheating my coffee (well… more like a HUGE latte with barely any coffee, if we're being honest) about a dozen times a day.

Microwave vs oven meringue (yes, both work)

Traditionally, meringue islands are poached in milk or baked in the oven. But in many French home kitchens today, the microwave method is popular because it's:

  • fast
  • reliable
  • surprisingly foolproof

The texture stays soft and cloud-like, which is exactly what floating islands are supposed to be. That said, I know microwaves can raise eyebrows, so I've included an oven method as well in the recipe card.

How to store this dessert

  • Vanilla custard:
Can be made ahead and stored covered in the refrigerator for up to 3 days. In fact, it's even better well chilled.
  • Soft meringue islands:
Best enjoyed the same day. They tend to weep and lose their fluffy texture if stored overnight.
  • Assembled dessert:
Assemble just before serving for the prettiest presentation and best texture. Don't forget the toasted sliced almonds and the caramel drizzle!

This floating islands recipe is incredibly easy to make and always impresses guests. I make the crème anglaise the day before, and on the day itself, all that's left to do is whip the egg whites with a bit of sugar.

You'll find the detailed floating islands recipe in the recipe card below. I hope you enjoy it as much as I do! If you try it, I'd love to hear what you think. Feel free to leave a comment at the very bottom of the page and give it a star rating ⭐⭐⭐⭐⭐. It truly helps support my little blog and means so much to me. Thank you!

Ingredients

For the vanilla custard cream (crème anglaise)

  • 2 cups +1Tbsp of whole milk
  • 4 large egg yolks (whites used for the meringues)
  • 1 vanilla bean (or 2tsp of vanilla extract)
  • ¼ cup (50g) granulated sugar (a bit more if you like it on the sweet side)

For the meringue islands

  • 4 large egg whites
  • ¼ cup (50g) granulated sugar
  • 1 big pinch of salt

Optional toppings

  • ½ cup caramel sauce (store-bought or homemade)
  • ¼ cup toasted sliced almonds

Instructions

Prepare the vanilla custard (crème anglaise)

  • Warm the milk: In a medium saucepan, heat the milk with the split vanilla bean and seeds (or vanilla extract) until it just begins to steam. Turn off the heat and let it steep a minute for extra flavor.
  • Mix the yolks & sugar: In a bowl, whisk together the egg yolks and sugar until pale and creamy.
  • Remove the vanilla bean pod from the milk and then VERY SLOWLY pour the hot milk into the egg mixture while whisking constantly (this prevents scrambling!).
  • Finish the custard: Pour that mixture back into the saucepan with the rest of the milk. Cook on low heat, whisking constantly until the custard thickens enough to coat the back of a spoon (8-10 minutes). Do not boil.
  • If it won't thicken, whisk in 1 teaspoon of cornstarch dissolved in a little cold milk.
  • Chill: Cool, then refrigerate at least 2 hours before serving.

Microwave Meringue Islands

  • Beat the egg whites: In a clean bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar while whipping until stiff peaks form.
  • Scoop meringue onto a microwave-safe plate. Microwave 45-60 seconds, checking doneness. The meringue should be set but still soft.

Oven Method (Alternative)

  • Preheat oven to 325°F (160°C).
  • Line a baking sheet with parchment paper.
  • Scoop or pipe meringue into mounds.
  • Bake 15-20 minutes until set but not browned.

Serve

  • Spoon chilled custard into pretty bowls or glasses. Gently place one or two meringue islands on top. Drizzle with caramel sauce and sprinkle with sliced almonds that have been lightly toasted in a dry skillet for a few minutes (no oil needed). Enjoy!
