Simple, elegant, and irresistibly French, eggs mimosa (oeufs mimosa) are the kind of dish that looks like you tried… even when you didn't. Creamy, delicate, and topped with that signature fluffy yellow "mimosa," they are a classic on French tables - from Sunday lunches to festive spreads.

If you've ever seen a mimosa flower, you'll understand instantly.
Bright, soft, and beautifully yellow, the mimosa blossom looks like tiny fluffy pom-poms! And that's exactly the effect we recreate here. The finely crumbled egg yolk sprinkled on top of the eggs gives them that delicate, airy texture and vibrant color.
It's simple, poetic, and very français!

How to Make Eggs Mimosa
This is one of those recipes that feels almost too easy, until you realize the magic is in the details.
- Start by cooking your eggs for exactly 10 minutes in boiling water. We want perfectly set yolks that are still tender, not chalky. Once cooked, transfer them to cold water before peeling, your fingers will thank you!
- Slice the eggs in half lengthwise and gently remove the yolks. Here comes the important part (and the very French part): divide the yolks into two separate bowls.
- In the first bowl, mash half of the yolks with mayonnaise, salt, and pepper until smooth and creamy. This is your filling. If you want to make it a little more indulgent (and honestly, why not?), you can add tuna (in France I use tuna in tomato sauce and it's absolutely delicious!) or even a small piece of anchovy before you add the filling.
- Fill the egg whites generously with this mixture.
- Then, for the signature finish: press the remaining yolks through a fine sieve directly over the eggs. This creates that light, fluffy "mimosa" effect that makes the dish so special.
- Finish with a generous sprinkle of fresh parsley or chives, and chill until ready to serve.

Tips for Perfect Eggs Mimosa

- Use a fine sieve for the yolk topping → this is what creates the real "mimosa" look
- Don't overcook the eggs → 10 minutes is your sweet spot
- Mash the filling well → no big chunks, we want it smooth and creamy
- Season properly → eggs need salt to shine
- Chill before serving → they taste even better cold
Don't aim for perfection. A few crumbs here and there? That's exactly what makes them beautiful!
Storage
If by some miracle you have leftovers…(not something we've experienced in our family of 7!)
- Store in an airtight container in the fridge
- Best enjoyed within 24 hours
- Keep them chilled until serving
But I don't want to give you false hope : these tend to disappear VERY quickly!

Eggs Mimosa (French Deviled Eggs - Oeufs Mimosa Recipe)
Ingredients
- 6 eggs
- 2 to 3 tbsp mayonnaise
- Fresh parsley or chives (optional)
- Salt and pepper
- Optional: anchovy fillets, tuna (or tuna mixed with tomato sauce)
Instructions
- Bring a pot of water to a boil and cook the eggs for 10 minutes. Transfer them to cold water, then peel them.
- Cut the eggs in half lengthwise. Carefully remove the yolks and divide them into two separate bowls (half for the filling, the other half for the "mimosa" topping).
- In one bowl, add the mayonnaise. Season with salt and pepper, then mash everything together with a fork until smooth. You can also add tuna (or tuna in tomato sauce) and mix well.
- Fill the egg whites with this mixture. If you like, you can place a small piece of anchovy in each egg white before filling.
- Place the remaining yolks (from the second bowl) into a fine sieve and press them through to create the signature "mimosa" texture. Sprinkle evenly over the filled eggs once they are arranged on a serving plate.
- Garnish with chopped parsley (or chives) if desired, and keep refrigerated until ready to serve.
