The Creamiest Asparagus Soup Recipe

This ultra-creamy asparagus soup is pure comfort in a bowl. A simple, elegant recipe that delights every time.

Creamy asparagus soup served in a small white bowl with rustic bread and fresh white asparagus on a wooden table.

There is nothing more comforting than a warm bowl of soup when the weather turns cold and life feels a little dramatic.

And if there's one thing we French people take very seriously, it's soup.
Soup, sauce, bread, cheese, croissants, crêpes… but that is another (very long) story.

Now I don't want to brag… but we do make the best soups.
Made from scratch. Silky smooth. Double extra creamy. Served with crusty bread that deserves its own standing ovation.

And this asparagus soup recipe? Silky, elegant, and fully aware of it.
You absolutely have to try it.

Why This Asparagus Soup Recipe Is Different

Two bowls of creamy asparagus soup garnished with herbs, served with crusty bread and fresh white asparagus.

Let me tell you something important: this is not a watery, sad, "I forgot seasoning" situation.
This is luxurious. Velvety. Spoon-coating magic.

The little French secret?
We cook the asparagus in a gentle mix of milk and water. Add a few humble potatoes, and suddenly you have the softest, dreamiest texture imaginable. No heavy cream overload. Just absolute creaminess.

And the best part? This asparagus soup recipe works beautifully with green or white asparagus. In these photos, I used white asparagus for that delicate, elegant flavor, very chic, very seasonal, very "I casually shop at the market with a woven basket."

The Real Reason Soup Is Genius

Let's talk strategy.
Soup for dinner is light enough that you can follow it with a slice of something decadent. Purely balanced decision-making, obviously.

No guilt involved.
(I have five children. Survival requires dessert.)

Speaking of which… have you tried my chocolate fondant cake and my flan pâtissier yet? You can thank me later.
But I digress.

If you're looking for a creamy, elegant, easy asparagus soup recipe that feels impressive but is secretly simple, this is the one.
Don't just read about it.
Run. Make it. Dip bread into it dramatically.
And report back. 😌

How to Get That Silky, Restaurant-Level Texture

Because a simple soup deserves proper technique.

1. PREP Your Asparagus Properly

  • If you're using white asparagus, peel it generously from tip to base and trim the ends. White asparagus is more fibrous and absolutely benefits from peeling before cooking.
  • If you're using green asparagus, you can usually skip peeling. Just trim the woody ends, and you're ready to go.

Different colors. Same goal: smooth, elegant texture.
We are making velvet. Not dental floss.

2. Strain for Extra Smoothness

After blending, pass your soup through a coarse sieve or even a pasta strainer.
Why?

Because we want the creaminess.
We do not want the fibrous strands.

Blending alone doesn't always eliminate every tiny fiber, especially if you're using an immersion blender. Straining keeps all the creaminess and removes anything that might interrupt that silky finish. It makes the difference between "very good" and "restaurant-level."

3. Too Thin? Do Not Panic

If your asparagus soup recipe turns out a little thinner than you'd like, simply let it simmer for another 10 minutes.
It will thicken beautifully as it reduces.

And here's the best part:
If you somehow have leftovers (in my house this is a myth: the more I make, the more they eat), this soup becomes even creamier the next day when reheated gently.
Which means it's perfect for making ahead.

4. The Final French Touch

Right before serving, add a generous teaspoon of crème fraîche to each bowl.
Not optional. Generous.
It transforms the flavor. It deepens the creaminess. It adds that subtle, luxurious softness that makes people close their eyes mid-spoonful.

Can't find crème fraîche? Use sour cream.
I won't tell anyone. Your secret is safe with me.

As always, you'll find the detailed asparagus soup recipe in the recipe card below. If you try it, I'd love to hear what you think. Feel free to leave a comment at the very bottom of the page and give it a star rating ⭐⭐⭐⭐⭐. It truly helps support my little blog and means so much to me. Thank you!

Ingredients

  • 1 lb (about 500 g) asparagus green or white, trimmed and peeled if white
  • 2 medium potatoes peeled and diced
  • 1 leek (white part only) diced
  • 1 yellow onion chopped
  • 2 cups (500 ml) milk (whole milk is best)
  • 2 cups (500 ml) water
  • 2 chicken or vegetable bouillon cubes (or 1 teaspoon of Better Than Bouillon paste)
  • Salt & pepper, to taste (taste first as the bouillon is salty)
  • 4 teaspoon crème fraîche (optional, 1 teaspoon per bowl), or sour cream
  • 1 tablespoon Butter or olive oil
  • Fresh herbs for garnish parsley or chives work great

Instructions

  • Prep the asparagus:
If using white asparagus, peel the stalks and trim off the tough ends. For green asparagus, just trim the woody ends. Cut into pieces and set aside.
  • Sauté the veggies:
In a large pot over medium heat, melt a bit of butter or olive oil. Add the onion, leek, potatoes, and asparagus pieces. Cook for a few minutes until slightly softened.
  • Add liquids and simmer:
Pour in the milk and water, add the bouillon cubes, and season with pepper (you can wait on salt as the stock is salty). Bring to a boil, then reduce to a gentle simmer for about 25 minutes until everything is tender.
  • Blend & strain:
Puree the soup until smooth. Then pour it through a coarse strainer (or even a pasta colander) to keep the silky cream while trapping any unwanted bits. Return the silky soup to the pot.
  • Adjust texture:
Too thick? Add a splash of milk. Too thin? Simmer gently for 10 more minutes to reduce.
  • Serve:
Ladle into bowls and swirl in a teaspoon of crème fraîche if you like (or sour cream, I won't tell 😉). Garnish with fresh herbs if desired.

Notes

Tips

  • White asparagus is more fibrous, peeling helps ensure that extra-smooth texture.
  • Straining makes the soup luxuriously silky.
  • It's even creamier the next day if you make it ahead.
